Yields: 3 - 5 servings
1/3 c. balsamic vinegar
1/4 c. brown sugar
2 cloves garlic, sliced
3 (12-oz.) salmon filets, patted dry with paper towels
Freshly ground black pepper
2 c. halved grape tomatoes
1 c. quartered mini mozzarella balls
1/4 c. thinly sliced basil, for garnish
- Preheat oven to 375°. In a large bowl whisk together balsamic vinegar, brown sugar, and garlic. Add salmon to mixture and place in the refrigerator to marinate for 10-15 minutes.
- Remove salmon from marinade and place on a small baking sheet or baking dish. Season each piece of salmon with salt and pepper and top with tomatoes and mozzarella. Bake until opaque and flaky, 18 to 20 minutes. Garnish with basil and serve.
